Now that the weather outside has become unbearably hot and sticky, it’s time to start making some frozen treats. Instead of ice cream, however, you can make this recipe instead. Made from strawberries and greek yogurt, it’s full of good-for-you fruit and protein packed yogurt. And the best part of all? It’s fat free!
STRAWBERRY VANILLA FROZEN YOGURT
2 cups fresh strawberries, washed and hulled
3 tsp vanilla extract
2 Tbs honey or agave nectar (you can adjust more or less depending on your personal taste)
2/3 cup fat free greek yogurt
Blend the strawberries in a food processor until smooth. At this point, you can either strain the juice to get rid of the seeds or simply leave them in there (I just left mine in). Add the rest of the ingredients to the food processor with the strawberries and blend until fully combined.
Process in an ice cream maker* according to manufacturer’s instructions. You can serve as is (it’ll be a bit soft) or freeze the mixture for up to 2-3 hours to firm up more.
*Note- If you don’t have an ice cream maker, you can use frozen strawberries and blend them with the rest of the ingredients. Then put the mixture in the freezer for a few hours to firm up. It won’t be quite as smooth, but it’ll still be delicious!
